Mango Tuna Salad with Blue Chips

INGREDIENTS

Mission Organics® Blue Corn Chips

1 lime, juiced

2 tablespoons canola oil

1 12-ounce cans Albacore tuna salad in water, drained

1 mango cubed, peeled and seeded

1 15-ounce can whole black beans, drained and rinsed

2 diced Roma tomatoes

1 sliced green onion

¼ cup sliced black olives (from a 10-ounce jar)

1/8 teaspoon ground black pepper

INSTRUCTIONS

  1. Mix all ingredients in small bowl; stir well.
  2. Place salad mixture in serving bowl. Serve with blue chips.
