Street Corn Jalapeno Dip

INGREDIENTS

Mission Organics® Blue Corn Tortilla Chips

10 oz. Corn kernels

2 Jalapenos, diced

1 can Green chiles (4 oz.), drained

1 tbsp. Vegetable oil

½ tsp. Salt

2 cups shredded Pepper Jack cheese (8 ounces), divided

½ cup Mayonnaise

½ cup Sour cream

2 Green onions, finely chopped

INSTRUCTIONS

    1. Preheat broiler.
    2. On a baking sheet, combine corn, jalapenos, green chiles, oil, and salt. Broil until corn is lightly browned, 8-10 minutes. Reduce oven temperature to 425℉.
    3. In a medium bowl combine 1 cup Pepper Jack, mayonnaise, and sour cream. Stir in corn mixture and transfer to a small baking dish. Sprinkle with remaining 1 cup Pepper Jack.
    4. Return to oven until cheese is melted and dip is bubbly, about 10 minutes.
    5. Sprinkle with green onion and serve with tortilla chips.
